Sorry to hear it is indeed the clutch.  Bummer!  I discounted this at first
because you just replaced the clutch.
Let us know what you find out.

As to the 80 psi reading at 3000 rpm -- I wouldn't think that's unusual,
depending on the type of oil you're running and if the engine is fully
warmed up.  My 200 and v8 both peg past 5 bar at 3k (~72 PSI).  Years ago
Audi had an oil lubrication problem and had to fix the cars under recall
(early 80's, I believe).  havn't heard of any bottom end lubrication
problems on these cars since :-)
