[V8] '91 V8 handling issues

Fact is, the 195 is too skinny for the V8, unless you're talking ice tires and coil-overs. I've always stayed at 205 and over (depending on the rim width used; the stock 7.5 inch should have 205). With a 205 (or 215 on 8" rims), the handling does lose some sharpness, for sure, but actually brings it more in line with that of a leSabre. Not totally a bad thing, both in snow and slush.
Another consideration is brand. I'm a dunlop or nokian only guy -- keep your michelins and especially blizzaks. My choices aren't the best for carving on-ramps, but have a pronounced improvement under snowy braking and lateral correction. In any event, keep it under 100 mph -- I had a massive failure a couple years ago after a prolonged drive on dry pavement at that speed. That's not what they're built for...
One other fix would be to source an urS4 rear sway bar, and get used to opposite lock. Otherwise, find a needy 5000fwd or a 5-series bimmer owner to sell the 195s to and get something wider.

A 195/65 is considered a good snow tire size for a V8 or 200, but that size
can feel squirrely, especially if your normal summer tire is a proper
215/60. If the lug bolts are tight and the pressure is up, you've got
whatever type of handling you're going to get from that tire.
