[V8] thermostats ad nauseum

I went and bought another new thermostat at lunch and went home and
cooked it up with the other new one and it's even worse than that one.
It's some off-brand German manufacturer called MotoRad. Has almost no
markings on it and the temp marking is in F (192) and is way down in a tiny
hole on one end of the central rod. POS.
I called CarQuest and orderd a Wahler that I can pick up tomorrow. I hope it
cooks up okay.
Is this hot water thing a valid test? Would a new thermostat need super high
heat at first to get it to do it's thing? Seems kludgey that it would but
stranger things have been true...
I drove the car to lunch to go get the new new t-stat etc. From work, it
took about 3 miles, and climbing a moderate hill and sitting at another
light until the temp gauge got up to near 100. Then it was pretty solid
there, although for the last little bit before I got back to work it edged
over 100 a little. I may be splitting hairs at this point, what with the
differences in gauges, etc. If the new Wahler doesn't cook up okay, at least
what I think is ok, I'm going to leave the old t-stat in there for the
summer. I can always put one of the "hotter" ones in in the fall.
It doesn't seem like this should be this much hassle.
