I have to agree. It sounds like it's stuck open a little, in there
sideways,
too big of a bleed hole (shouldn't be one at all I believe) or just plain
faulty. You should be able to replace it yourself by dropping the PS
pump then pulling the two bolts on the thermostat cover. BE SURE
to get an OEM thermostat! The opening is MUCH larger than your
generic auto parts thermostats. Of course I'd lean toward something
like an 87 C or even 92 C. Makes for a really nice heater. :)

I know the feeling. The last time I took one in was the 914. It wouldn't
shift right and I'd always heard how temperamental the adjustment was.
It's really no different than our VW's. They charged me about $30 to
adjust it and proceed to tell me it's no better and that something's
broken or out of adjustment in the transmission such as a shifting
fork or something. I'd already ruled out the fork for sure and the other
was unlikely. It turned out to be a broken input shaft.
Around here, most of the dealers have a reputation of "Pay the dealer
to fix it then take it home and still end up fixing it yourself to get it
right!"
     Happy Thanksgiving all!
