[Vwdiesel] Oil pressure problem

Sounds like a definite restriction between the main oil gallery and the
head circuit.
Your cam needs oil pressure as much as the the mains do. I wouldn't
bother trying to fool the oil pressure sensor at the head. You will be
happily driving down the freeway at some reasonable speed when the cam
decides it has had enough and disintegrates, taking the pistons, valves,
and/or rods with it.
There is no easy way I can think of the clear the obstruction short of
pulling the head unfortunately.
