I'll do that when rebuilding a head but would never consider doing  that 
for a valve adjustment.  I suppose you COULD do it by pulling the cam, 
lifters, guessing how much you take off, not square and risking getting 
grit in the engine.  Otherwise you have to pull the head.  A  little too 
time consuming compared to swapping to one or two thinner shim.
