I use quick disconnect connectors on my 4x4 and once I get the VW re-wired it'll be the same:

You can get the connectors in various sizes for various sizes of wire/cable.  I went with 
some 350 amp rated connectors and they have worked well.  I have one at the front and one 
at the back of my 4x4 and a pair of jumper cables attached to a connector and that lets me 
plug those in to the front or back of the truck.  My batteries on that truck are totally 
inaccessible underneath the truck.  The connectors are insulated and polarized so you 
can't hook them up backwards (assuming up build them properly in the first place).
