Nobody has mentioned air bubbles.  Things heat up and either can seal up leaks or make them worse.  Air in the line can do pretty much the same as lack of fuel since it creates the same situation, basically.

Seems to me that it must be heat related if it only happens after hours on
he road.
Maybe a vapor-lock situation?  Any fuel lines in a position to get a lot of
eat from somewhere?
Or maybe your fuel pump is getting "tired" after hours of operation?
