On my 89 100, 5 cyl no turbo 130hp the oil bar guage is 1.8 at idle
and 4.8 when cruising.  Oil Temp is just above 60C in town and at 
the first line above 60C when cruising at my normal 80mph 4000rpm
on the highway.  This in the summer with 20/50 oil and winter 10/30 oil.

If I cruise at high speeds (100mph) for more than a minute or the 
outside temperature is above 80-90F the oil temp can climb to halfway
to the third mark or 130C.  I've seen 130C for oil temp when cruising 
for an hour at 100mph plus and the outside temp was 95f with a/c on
for an hour or so.... seems normal to me.  What's the calculation
to convert Celsius to Fahrenheit anyway ?
