I don't know about the coking, as I don't have much experience with 
turbos, but the narrowest range possible is the best.  For example, 15W50 
is better than 5W50 due to the reduced "springy sprongy" polymers. 
(Warning, Anthropologist on board!)

I can't remember what they're called, but there are long string-like 
polymers that allow an oil to have such a wide viscosity range.  The 
fewer, the better.
