Actually, sunroof delete has been an option on Audis with standard equipment
sunroofs (and most other European high-line cars) for years.  But the take-up
rate is very low because:

a)  You don't get any money back; the car is the same price.
b)  Resale value of a non-sunroof car takes a bath, and the audience who
wants the car approaches zero.
c)  No dealer will ever stock one because it ends up standing around forever,
eating up expensive floor planning money, waiting for the customer who never
comes.
d)  The wait is 3-6 months from order to delivery.

Once in a great while somebody will really need the headroom, but I doubt
that more than 10 cars get built this way annually.
