Classic Audi failure. The clutch mechanism has an over center spring so
without the master cylinder attached it will pot up if over halfway up and
pop down if over halfway down. The problem is either a bad clutch master
cylinder (about $100 easy to change) or a bad slave cylinder(about $50 and
hard to change).
It seems usually to be the master cylinder so change it first.
