Your readings are about right. Does the Coupe GT have an aftermarket
thermostats that's rated at a lower opening temperature? If so then
that might explain the lower temps.

Check your oil level. If your engine oil level is fine then I wouldn't
worry about the change in pressure. It may be caused by different oil
viscosities...
