Tire Ratios

I'll be getting a new set of tires in the morn.  I've saved posts on the 
subject and have a list I'll be checking out.  I've visited several 
different tire manufacturers sites and each one has listed 
185/60HR14's as the OEM size for my car.  I've been running 
195/60HR14's (Dunlops).  Should I be running the 185's?  What 
difference am I going to see if I go back to the 185's; quieter but 
less handling maybe?  Will going to a 55 or 65 ratio mess up 
anything?  Inquiring minds want to know.
