How to bleed hydraulic fluid? Coolant change?

As usual the Bentley is all but helpful. How does one bleed the
hydraulic system in an 80? The only hydraulic part of the car is the
steering, no hydraulic brake assist. I am getting a fluid change kit from
Blau to help keep my 80 happy for the ensuing winter. As I can tell the
hydraulic fluid in my car right now is the VW yellow stuff, way cheaper than
Pentosin greeny. Although the kit comes with the green Pentosin hydraulic
fluid, which is the right fluid listed in the cars specs. One leak, little
one between the pump halves. Should I change or mix the VW yellow with
Pentosin? Any problems?
Coolant is easy to change, although I have never done. Remove bumper
and clear a free path from the lower radiator hose to the garage floor.
Undo that hose and catch the used coolant in something. Is that sufficient
for draining the old juice? Then do that hose up and refill with fresh
mixture. Run the car with expansion cap off and let all the bubbles find
their way out. Run the car until the cooling fans spontaneously turn on,
let the fans run for a few then when no bubbles appear, cap the tank and
turn the engine off. Sound proper?

Thanks again!
